I have tried to keep my recipes simple.  I am still very much learning and the simpler recipes help me understand the ingrediants better.  I usually look around on homebrewtalk and other sites for examples of the stye I want to brew then write up the simplest recipe I can.  The follow are some recent brews I have liked and brewed more then once.  They are all for 5 gallons.

Stout:

11.5# Pale
1# Flaked Barley
1# Roasted Barley (300 SRM)
0.5# Black Patent (500 SRM)
0.5# Caramel 120
1oz Challenger @ 60 min
1oz EGK @ 40 min
0.5oz Challenger @ 20 min
Tried both WLP-007 and WLP-001

OG= 1.067
FG=1.016
ABV=6.7%

Mash for 60 minutes at 153 degrees.  Do not add the roasted barley, black patent, or caramel 120 to the mash.  Add the dark malts to the top of the mash when you start your first vorlauf.

Nice solid stout.  Tried it alone with english yeast for a Foreign Extra Stout and with WPL-001 with coffee and vanilla bean for a nice coffee stout.

Caramel Amber:

7# Pale
1.5# Caramel 60
0.25# Caramel 120
0.65oz Chinook @ 60min
1oz Chinook @ 0min
1oz Willamette @ 0min
1# Sugar follow the directions below and add to the kettle 15 minutes before the end of the boil.
Tried both US-05 and WPL-001

In a pot add sugar to 1/2 cup of water and 1 tsp DAP.  Heat to 290 without stirring then add 3/4 cup water and stir then cool.  It should be amber colored and have some roasted flavor.  If not repeat heating to 290 again to get a darker color and more flavor.

Mash @ 150 degrees.  Source

IPA:

11# Pale
3# Rye
1# Caramel 60
0.5# Cara-Pils
1.5oz Nugget @ 60min
1oz Nugget @ 30min
1.5oz Falconer’s Flight @ 10min
1.5oz Falconer’s Flight @ 0min
1oz Falconer’s Flight dry hop for 5 days
WPL-001

OG= 1.072
FG=1.014
ABV=7.6%

Mash for 60 minutes at 151 degrees.

I like IPA, I like rye, I wanted to try Falconer’s Flight.  Very happy with this one.

Oaked DIPA:

14# Pale
3.5# Rye
1.5# Caramel 60
1.5oz Warrior @ 60min
1oz Warrior @ 30min
1.5oz Mosaic @ 10min
1.5oz Mosaic @ 0min
3oz Medium toast oak cubes 4 weeks
1oz Mosaic dry hop for 5 days
WPL-001

OG=1.088
FG=1.017
ABV=9.5%

Mash for 60 minutes at at 151 degrees.

I wanted to try mosaic.  The oak flavor is nice but masks the tropical fruit of the mosaic hops.  I will be brewing this again without the oak.

Winter Spice Session Beer:

5.5# Pale Malt
1# Aromatic Malt
1# Honey Malt
1# Honey
2oz Malasses
2 tablespoons ground Allspice, added @ 10 minutes left in the boil.
1.5oz Fuggles @ 60min
0.5oz Fuggles @ 10min
London Ale Yeast Wyeast #1028

OG=1.042
FG=1.007
ABV=4.6%

Mash for 60 minutes at 153 degrees. Source

My fiance wanted a christmas spice beer but did not want a high alcohol beer.  I was also kind of daunted by all the ways to spice it.  This turned out nice and very sessionable.
